December 2025 in the Twelve Months of Fruit - Cranberries by Fran Joyce

For our final fruit in the 2025 Twelve Months of Fruit, I selected cranberries, but instead of making a cranberry sauce or relish, I chose a recipe for Cranberry Apple Crisp. It’s a delicious dessert for any winter holiday meal. Here is the link to the recipe I used,

Tart and colorful cranberries paired with Granny Smith apples are an excellent counterbalance to the brown sugar in this recipe.

I like serving a crisp instead of a pie during the holidays because it saves you from the whole process of making, rolling out, and trimming your pie dough, plus you’re adding healthy oats for added fiber.

This recipe is delicious, quick, and simple. The most time consuming part is peeling and slicing the apples. I sliced mine super thin, but you don’t have to. I didn’t make any substitutions, but I omitted the nutmeg and doubled the cinnamon. I always use Ceylon cinnamon because it has lower coumarin levels than Cassia (Saigon, or Korintje) cinnamons. It also has a more delicate flavor.

The recipe is great. The topping is sweet , but not overly sweet, and the flavors of the cranberries and apples work well together. The next time I make it, and there will definitely be a next time, I will probably use a little less brown sugar and more rolled oats in the topping, but only because I’m always looking for opportunities to use less sugar.
