This month I selected an Apple Salad with Maple Vinaigrette Dressing. The obvious choices for apple recipes are apple crisp, apple cake, or apple pie. We featured an apple pie in our Twelve Months of Pie, so we wanted to find something different.
I always try to incorporate fresh fruit into every meal. In addition to the fruit salad I will be serving at Thanksgiving, I always include some sort of garden salad. To change things up from a Caesar salad or a mixed green salad, I’ll be serving this salad. It contains apples and pomegranates.

It’s easy to follow and easy to customize to suit your family’s tastes. This recipe is from a wonderful blog with pictures, tips, and lots of suggestions for alternate ingredients. I used slivered almonds instead of candied pecans because we are all trying to cut back on sugar. I also added sliced raw Brussels Sprouts to add an easy cruciferous vegetable. You could use cauliflower or broccoli if you wanted, or you could follow the recipe exactly.
Since I’ve used feta cheese in previous recipes this year, I switched to a blend of shredded mozzarella, asiago, provolone, Romano, and parmesan cheeses that I had in the refrigerator. It gave the salad a slightly different texture and flavor which was a hit with my family.
The Maple Vinaigrette dressing has ingredients commonly found in most kitchens, and it’s delicious!
