I wanted to follow up last month’s dessert with a main dish that isn’t overly sweet, and this is perfect.
Easy ingredients list, simple instructions, and short cooking time. What could be easier or more beautiful?
The blueberries, caramelized onion and baby arugula are colorful atop the whiteness of the feta and ricotta. The toasty Naan bread is the perfect holder for this beautiful combination.
The only adjustment I made to the recipe was to make one pizza instead of two because my son was going out of town. This pizza is so good that I wish I’d make two pizzas. Also, I gave it a couple of extra minutes in the oven so it would be nice and crispy, and the blueberries would be cooked to perfection.
FYI – After you wash your blueberries be sure to pat them dry to get rid of any extra moisture before you put them on the pizza.
I’ll definitely be making this again and maybe trying other fruits.
